Zucchini & Bacon Muffins

                Ingredients
- 1 onion, finely chopped
 - 1 cup self raising flour
 - 2 cups grated zucchini
 - ½ cup olive oil
 - 3 rashers bacon, chopped
 - 1 cup tasty cheese, grated
 - 4 eggs, lightly beaten
 - Salt and pepper
 - Paprika and mustard to taste
 
Method
- Preheat oven to 180ºC on fan forced function. Grease a 12 hole muffin tray
 - Heat a little olive oil in a fry pan and cook the onion and bacon until the onion is golden.
 - Combine the flour, cheese and zucchini and mix in the eggs and remainder of the oil to make a batter.
 - Add the onion mixture, paprika, mustard and salt and pepper. Stir well and spoon into muffin cups.
 - Bake for 15 minutes. Remove from muffin tray and allow to cool before serving.
