Mini Tartlets with Assorted Fillings

Ingredients

  • 1 portion shortcrust pastry, baked
  • Lemon curd
  • Fresh cream whipped with icing sugar to sweeten
  • Nutella
  • Thick custard
  • Fresh strawberries, cut into small wedges, stalk intact
  • Strawberry or mixed berry jam
  • Mint leaves for garnish
  • Crushed peanuts or nut of choice, or flaked almonds
  • Chocolate scrolls or flake
  • 4 piping bags

Method

  • Spoon one of each filling into a piping bag, and pipe into the prepared tartlet.
  • Lemon curd filling, top with a strawberry wedge, small mint leaf
  • Fresh cream filling, top with a little jam and a strawberry wedge
  • Nutella filling, top with crushed nuts or flaked almonds
  • Custard filling, top with chocolate scrolls or small pieces of fruit.
