Zucchini & Bacon Muffins


  • 1 onion, finely chopped
  • 1 cup self raising flour
  • 2 cups grated zucchini
  • ½ cup olive oil
  • 3 rashers bacon, chopped
  • 1 cup tasty cheese, grated
  • 4 eggs, lightly beaten
  • Salt and pepper
  • Paprika and mustard to taste


  • Preheat oven to 180ºC on fan forced function. Grease a 12 hole muffin tray
  • Heat a little olive oil in a fry pan and cook the onion and bacon until the onion is golden.
  • Combine the flour, cheese and zucchini and mix in the eggs and remainder of the oil to make a batter.
  • Add the onion mixture, paprika, mustard and salt and pepper. Stir well and spoon into muffin cups.
  • Bake for 15 minutes. Remove from muffin tray and allow to cool before serving.
