Brandy Snap Baskets/Cigars


  • 50g butter
  • 50g castor sugar
  • 2 tblsp golden syrup
  • ½ tsp ground ginger
  • 50g plain flour


  • Melt the butter, sugar and golden syrup in a saucepan. Cook on medium heat until the sugar has melted. Remove from the heat and stir through the flour and ginger.
  • Using a teaspoon, measure out four lots of the mixture, placing them on a baking tray lined with baking paper, and place well apart from each other to allow for spreading. Bake four at a time to enable you to work with the warm mixture before it sets.
  • When the mixture is slightly cool, either drape over a small bowl that has been inverted, or roll around the handle of a wooden spoon to create a cigar.
  • When completely cool, pipe whipped cream into the cigar, or scoop ice-cream into the basket.
