To celebrate becoming an official part of the Belling family, Emelia has created these gloriously jammy strawberry galettes. Berry season is upon us so use any berry you love!

125g unsalted butter, cold

250g plain flour

75g icing sugar

1-2 tablespoons water

 

For the pastry, combine the butter, flour and sugar in a stand mixer or processor and blend until it resembles breadcrumbs. Add the water to bring together to a dough.

3-4 punnets strawberries

Juice and zest of 1 lemon 

2 tbls plain flour

3 tbls caster sugar

 

Combine all of the ingredients. Roll out the pastry to ½cm thick and pour over the strawberries leaving a good 4-5cm border of pastry.

Fold the pastry over the strawberries - the more rustic the better - and brush with egg wash.

Bake at 180c fan forced for 30 minutes or until the pastry is golden and the berries have collapsed.
