Winter is officially here and with it comes the BEST winter puddings, and the king of those has to be the sticky date. Who knew this pud was the most simple of puds to make?

330g dates, pitted and diced 

1 cup boiling water

2 tsp bicarb 

 

Combine and let the dates soften and get mushy

200g plain flour

2 tsp baking powder 

100g unsalted butter, super soft

2 eggs 

50g brown sugar 

 

Combine all the ingredients + dates together and mix until cohesive.

Pour into your pudding dish and bake at 160c - I’m using the intensive bake function on my Belling oven which cooks this beautiful pud in just 15 minutes.

For the sauce, combine 

400g thickened cream

200g dark brown sugar

70g unsalted butter 

2 tsp vanilla

 

Into a saucepan and bring to the boil. Pour half the sauce over the hot pudding, reserving the other half to serve.
